Sushi lovers shouldn't miss out on the Nobu experience. A pioneer of modern Japanese cuisine, chef Nobu Matsuhisa's recipe for success was to artfully redesign his native country's traditional seafood favourites and fuse them with the firey flavours of Peru (where he ran his first sushi bar). His Vegas restaurant, part of a world-wide chain which began in New York City in partnership with actor Robert de Niro, is a sanctuary from Hard Rock Hotel's loud music and craps tables. Touches of nature in the decor, like the bamboo pillars, birch trees, a black river rock and seaweed wall and burnt ash tabletops, enhances the experience. Dinner from 6pm seven days.
